This course is designed to help the student prepare to write the Alberta Provincial Journeyman Examination and Red Seal Certification. All areas of cooking are revisited and reviewed including Pastry, Garde Manger, Range and Sanitation and Safety covering all three years using the apprenticeship outline and current ILM’s. This is a theoretical course taught in a classroom and there will be no hands on kitchen work. Students will be required to buy the Cook Refresher ILM in order to be properly prepared.
